You know it’s going to be a long night if you plan on doing any Black Friday shopping. Either late night or early morning… you’ll need some energy! How about these 4-ingredient Black Friday Energy Bars! Easy enough to make after a long day of cooking and nutritious enough to eat all night long. Enjoy!
Black Friday Energy Bars
– 1/2 cup nuts of choice, finely chopped
– 1/2 dried fruit of choice, chopped ( I used dried cranberries)
– 8 pitted dates, mashed into a date paste
– 1/2 teaspoon cinnamon
Optional: mini dark chocolate chips and/or coconut shred
Mix all ingredients together (by hand works best) until ingredients are evenly incorporated. Allow ‘dough’ to harden slightly in the fridge for 5 minutes. Place dough between pieces of wax paper and roll out to desired thickness with a rolling pin. Using a knife or pastry cutter, cut bars to desired size. These are sticky so place bars between wax paper when storing.
